Today Was Good, Today Was Fun. Tomorrow Is Another One. – Dr. Seuss

A lot of good stuff happened this weekend and I’m going to do my best to fit it all into one post. It was just that great that I need to share everything!

Saturday, I went on a mini road trip with the BFF. We drove to this store called Our Favorite Place in Eufaula, Ok. It’s a store dedicated to selling only made in Oklahoma products. They’ve got jewelry, foods, chocolates, art, etc. It was a really neat place. I ended up getting most of my foodie pen pal foods from there. But, I also ended up buying lots of stuff for myself. Here’s what I got for myself.


I got Ruby’z red sauce, mango salsa, beef jerky, bloody Mary mix, green chile stew soup mix, orange blossom honey, salsa mix, and BLT dip mix. Two things I also got (not pictured) are chipotle lime mustard and jalapeΓ±o pecan brittle. The brittle was AMAZING! Spicy and smoky and just plain good! It isn’t sugar free, but I really wanted to try it. So, I bought it and sent some in my FPP box and gave some to my dad and then I kept only a little. πŸ™‚

After I got home, I was hungry so I made some chicken apple sausage, Brussels sprouts, and rice with corn and bell pepper. I added a little of the chipotle lime mustard to my sautΓ©ed sausage and it was good!


Sunday, I went over to my dads for our usual Sunday stir-fry. We choose a different stir-fry recipe every week so we hardly ever make the same thing twice. This time it was Thai style chicken with walnuts. It turned out to be my favorite stir-fry so far!

Here’s what all it had in it:
White onion
Yellow bell pepper
Green bell pepper
Water Chestnuts
Bamboo shoots
Crushed red pepper flakes
Chicken broth
Oyster sauce
Fish sauce
Brown sugar






We served it over some jasmine rice and ate it all up! Well, actually, it made a lot so I’ve got leftovers for dinner tomorrow. Yay!

To top off the great weekend, I went to Sunday evening church. I love Sunday nights because it’s our small group of young adults who get together. We talk as a group about whatever lesson our youth leader is on. Then we break up into smaller groups based on gender.

I was in a group with some amazing females and we had a great lesson. I feel like I learned a lot about them, and about myself. They have a great bond in the church that is similar to a family bond.

I also had a lot of firsts at church tonight. I have a huge fear of speaking out loud, especially in front of people I don’t know well, and I faced my fear and spoke out loud and put my thoughts out there for people to hear. It was a great feeling not being paralyzed by my fear. At the end, we did a prayer circle, so I prayed out loud with other people for the first time. I was nervous about it and one of the girls gave me advice and made me feel at ease and it worked. I felt like it was the easiest thing to do in that moment because I felt like God was helping me and the words just flowed out. It was refreshing to put myself out there and face my fears and realize how easy it was to overcome those fears.

Workout Wednesday

Wednesday is a good night for me and the BFF to get together for a workout since she comes to Tulsa (she lives 30 minutes or so from me). I hadn’t planned to workout tonight but when she texted me, I thought, “Well I’d love to see her so, yeah, let’s workout!”

We didn’t have a plan of what we wanted to do for our workout. So, since we’re both participating in The Color Run, we figured we should either walk on the treadmill or do the elliptical. She chose the elliptical so that’s what we decided to do. We ended up going for 30 minutes and I burned a little over 200 calories. I was pretty impressed with myself cause there have been times when I couldn’t last 5 minutes on the elliptical. The 30 minutes went by quickly since we had so much to catch up on and it was a great feeling to workout again. It’s been a couple weeks since I’ve exercised. We already have plans to go again Sunday.

Not only did I get a workout in tonight, but the BFF also brought me some treats! Healthy treats! Here’s a picture of the goods.


The bottom two goodies are roasted chickpeas. The flavor on the right is a taco type flavor and the flavor on the left is agave and cinnamon. These were both delicious and a great snack! I think I’ll pack some in my lunch for tomorrow.

The top right little muffins are a healthy chocolate chip muffin made using mashed bananas and sweet potatoes and no flour. They tasted just like a chocolate chip muffin with a mild banana flavor. Soooooo good!

And last, but certainly not least, are raw brownie bites! They’re obviously the dark brown balls on the plate. πŸ™‚ These were my favorite! I’m not 100% sure what all is in them. When the BFF was telling me about them, she said they were bad so I guess I stopped paying attention to what was in them, haha. I know she used dates, unsweetened cocoa powder, almond extract, vanilla extract, Splenda, and stevia. Either way, they were yummy! It was kinda crunchy inside and tasted like a brownie bite with nuts in it. I ate them both for dessert. πŸ™‚

To complete this great day, my sister caught up on reading my blog and posted 8 great comments on all my previous posts. It was nice to log in and read her thoughts. I didn’t realize just how much I appreciate her encouragement and support until I didn’t have it for a week (she was on vacation). I’m glad she’s back!

My 27 Goals

My BFF recently told me about this idea she read about where on your birthday every year, you make a list of goals you want to accomplish that year. The number of goals you make is based off of how old you are. Even though my birthday is in November, I still thought it was a cool idea and I wanted to participate. Better late than never!

The BFF posted her goals on her blog recently and it inspired me to make my own list (I had been procrastinating). Here’s a link to see her 26 goals.

So here goes MY list of 27 goals.

1. Start a blog- Well that was easy. I can mark this off of my list.

2. Compete in the Color Run 5k- I participated in the Glow Run, which was fun, but the color run looks like even more of a good time. My mom and I are going to do it together in April!

3. Lose 60 Pounds- The last weigh in I did was on Sunday and I weighed in at 335 pounds. That’s a 37 pound weight loss! I’m already over halfway there. Of course I’m going to keep going after 60 pounds, but this is a nice small stepping stone to a larger goal.

4. Go to New York for a weekend with my mom- My mom travels a lot and goes to New Jersey often. She mentioned me possibly flying out to NYC and having a fun weekend together since she’ll be in that area already. I’m excited and hope we get to do this because I’ve always wanted to go to NYC!

5. Go to Church more often- I’ve already accomplished this one as well. I’ve been to a church function, a Sunday night church service, and I’m going to Sunday morning service this Sunday. And I have been doing Bible study every Tuesday for the past 3 Tuesday’s.

6. Try a new restaurant- I always say there are tons of restaurants I wanna try but I usually end up going to the same places. Since I’m not eating out hardly at all, this would be a nice treat to do once.

7. Make new friends- I’ve got some great friends, so I’m not trying to replace any of them. It can never hurt to meet new people though. Did you ever know someone who had too many friends?

8. Clean my apartment- Like a deep clean. If you know me, you know I’m messy. And I’d like to actually have people over, which leads me to my next goal…

9. Have people over to my apartment- I never have anyone over because my apartment is messy. I’m determined to get it clean and keep it that way so that I can have people over and feel comfortable with it.

10. Meet my nephew- My only sibling is having her first baby and I’m soooo excited! He’s due in May and I plan on going to Dallas after he’s born to meet him. He’s going to be the cutest thing ever and I plan to spoil him and be the best aunt I can be!

11. Make another super healthy dessert- I enjoyed the banana chocolate blueberry muffins so much that I’d like to make another healthy dessert. It was just so cool to me that they turned out like a cupcake even though there was no butter, oil, or sugar. Crazy!

12. Get my teeth whitened- Who doesn’t want whiter teeth? I feel like mine could use a little whitening so why not?

13. Make a killer playlist to workout to- Pretty self explanatory. Rhapsody is amazing and I’m sure I can create a great playlist from all their song selections.

14. Go to a meseum- I haven’t been to a museum in forever! I’ve been talking about wanting to go to one so I put it on my list. Now I’ll have to make time for it. πŸ™‚

15. Take my grandma out for a day of fun- I don’t see my grandma often enough so I should make an effort to spend some quality time with her. You never know, it could be her time to go tomorrow, and I don’t want to regret not spending time with her.

16. Read 3 books- I need to start reading again. I just don’t make time for it and I should. Three books isn’t that many, I can do it!

17. Go to Trader Joes- When I go down to Dallas next time, I’m going to visit Trader Joes. I hear it’s pretty great and that they’ve got good prices. I wish they’d bring one to Tulsa.

18. Light my candles more often- I love candles and I buy them pretty often, but I don’t light them that often and I don’t know why. They smell so great.

19. Watch the sun set- This one is simple and it happens every single day but I never pay attention to it.

20. Exercise with my sister- I can already imagine what this will look like. I’ll be a biggest loser contestant and she’ll be Jillian. Haha. I remember back in the day my sister and I used to do Tae Bo together and then go eat spam sandwiches. It was a lot of fun! Except this time, no spam.

21. Change the lightbulbs in my apartment- Some of them have gone out and I still haven’t changed them out. It’s getting darker in my apartment…haha.

22. Buy a lunch box- I need something besides a Reasors sack to bring my lunch in. I also need a reusable ice pack so I can keep it cold.

23. Paint something at Pinot’s Palette- I’ve been dying to go and paint a picture there! I hope to do this one soon with my momma.

24. Go to the farmers market on Saturday morning- Now that I’m eating more vegetables, it’d be nice to get some local fresh veggies from the farmers market.

25. Give up diet pop for a week- This one might be hard. I’m hoping that if I can give it up for a week, then I can try to cut it out completely. We shall see!

26. Cook together with my dad- This one is easy because I do it often, but it’s something I enjoy and I’d love to keep it up. We make a lot of healthy stir-frys in the wok I got him for Christmas. It’s become part of our Sunday ritual and I cherish that father daughter time together.

27. Make homemade doggy treats for my dog- I don’t buy treats often for my dog. She’s getting older and I think her stomach doesn’t tolerate them as well as it used to. I’ve heard that pumpkin is good to soothe a dogs stomach so I’d love to make her a treat that’s good for her.

Well, that’s my list of 27 goals I’d like to accomplish before November 13th 2013. I’ll update you on my progress as I complete them. I really like this idea of making goals. It gives you something to look forward to doing and it gives you a sense of accomplishment after you complete a goal. You should try it too!

Healthy Cupcakes! Say What?

Tonight I got together with the BFF for some healthy cooking. It was a lot of fun and we made some good stuff!

First we made nachos. Mmmmm, nachos. πŸ™‚


We used baked tortilla chips, fat free refried beans, reduced fat cheese, and then topped it with whatever toppings we like. I topped mine with red onion, green onion, and lots of tomatoes. I also added some chunky salsa with lime. Delicious! My nachos were gone in about 3 minutes. Bummer. That’s ok though because I was actually really excited about the dessert. I’m not usually a dessert person but these chocolate blueberry banana cupcakes with peanut butter frosting sounded sooooo good! And they’re super healthy! There’s no butter, oil, or flour in them and they still turned out delicious. Here’s the recipe.


First we put the bananas into the kitchen aid mixer. Once mixed or mashed, we added the next 7 ingredients until it looked like this.


Then we stirred in the blueberries and then put them into cupcake liners to bake at 350 degrees for 18 minutes.

And here’s the cupcakes after they’re done baking. Megan said they looked like lumps of charcoal. Haha.


The final step was to mix the light cool whip with the powdered peanut butter. This tasted just like peanut butter ice cream. Our whip cream mixture was a little soft so it doesn’t look like icing, but here’s the final product.


They were really good! This healthy dessert recipe is definitely a keeper. It tasted a lot like banana bread. With the chocolate and banana in the batter and the peanut butter icing on top, it reminded me of a banana split. My only suggestion is that next time I’d substitute maraschino cherries for the blueberries. Then I think it’d be exactly like a banana spilt. Yum!

BFF: Best Friends Fo-drizzle

It’s always a good day when you get to hang out with your BFF. And that’s exactly what I did today!

When we used to hang out, we’d usually go out to a new restaurant we hadn’t been before or go to the dollar movie theater and see a movie. But this time, my BFF suggested a healthy dinner and a workout. We’re both trying to lose weight, so it’s great that we’re both in the same boat.

We decided to do our workout first. I’ve been inspired recently from an episode of The Biggest Loser and from seeing it on other blogs to try this workout using just your body and a deck of cards. I have a small gym space in my apartment complex, so we decided to workout there. It was great because they had mats and water, which is all we needed.

So this card workout, I’m going to call it 52 card workout. Here’s how it works: First, you have four suits on the cards. Each different suit stands for a different workout. For example, we had hearts=push ups, spades=squats, diamonds=jumping jacks, and clubs=sit ups. You shuffle up the cards and draw a card one by one and do that workout. So if the first card was a four of spades, we’d do four squats. Jacks, kings, and queens all were tens and we made aces ones. To mix it up a little more, I threw in the two jokers. The jokers=run on the elliptical for 30 seconds.

I’ve only worked out once since I started my weight loss journey so I’m terribly out of shape. I was out of breath, or at least breathing heavy, by the 4th card. But overall, I thought the card workout was fun! It really made me sweat and my muscles are definitely already a little sore. After the 52 card workout, we used the elliptical machines for 5 minutes. Luckily me and the BFF like talking to each other, so we didn’t even notice that the 5 minutes were up.

Next we went to dinner. We had planned on going to this place called Muscle Maker Grill. I’ve been there twice before and I really like it because they don’t use butter or oils and it’s super healthy. They’re chicken “nuggets” are baked and served with fat free sour cream. They use whole wheat pasta and brown rice. They’ve got grilled chicken, salmon, broccoli, spinach, etc. Literally everything there is healthy. So we were super bummed out when we got there (at 8:20) and they were closed! Who closes at 8 on a Saturday night?! This isn’t a small town, it’s Tulsa people!

Anyways, after much (or little) deliberation, we decided on HuHot Mongolian Grill. We looked up their nutritional info before and it all looked pretty good. We both hadn’t been there before so we were excited to try it out. I’m really glad we did! The dinner comes with a soup or salad, then unlimited trips to the Mongolian grill bar. We ended up getting the hot and sour soup since they were out of the egg drop soup. It sucked pretty bad. But that’s ok because the Mongolian grill made up for it.

They have everything you can imagine on this bar. They had chicken, steak, pork, mixed seafood, cabbage, broccoli, sprouts, celery, squash, peas, black beans, pineapple, onions, zucchini, mushrooms, water chestnuts, bamboo shoots, cilantro, etc. They also had pad Thai noodles, soba noodles, Chinese noodles, and rice. Then they have a whole other bar with a TON of sauces. They had black Thai peanut, garlic sauce, kung pao, ginger, sweet chili, soy sauce, spicy mustard, sherry, and lots of other different flavors to choose from. We mixed and matched and came up with some yummy combos! They then stir-fry your meal while you wait and it takes about 3 minutes or so and it’s ready to eat. We both made pretty healthy options and felt full afterwards, but not gross. I think we’ll both go back for sure!

Afterwards, we made a quick trip to Walmart and we both got some One-A-Day women’s gummy vitamins. I haven’t been taking a multi vitamin and I probably should be.

We had planned on getting some froyo after dinner but for some reason, we forgot! But that was ok with me because I didn’t even feel like I needed anything sweet.

Today was a great day. I got to spend some time with my family and as you just read, also with my BFF. I hope we can make it a habit of getting together for a workout more often! It’s always more fun with a buddy. πŸ™‚

Tomorrow should be another great day. I’m going over to my dads and we’re making a healthy lunch and I’m going to introduce him to the 52 card workout! πŸ™‚
