I Am Not A Complete Vegetarian. I Eat Only Animals That Have Died In Their Sleep.

No post for 2 weeks…

Can only mean one thing…

I’m bored and not exercising and I’m making poor food choices.

Luckily, I’m still weighing regularly and I’m still the same weight.

Bad news though, is that I can’t seem to get motivated. It’s hard to exercise when it’s raining EVERY single day. It’s tough to wanna get out and do something when again, it’s raining EVERY single day.

I feel so blah when I don’t eat great or when I’m not active. I feel like a blob. Or a slug. I’m so over this rainy weather and I hope it goes away soon so I can go back to enjoying my turkey mountain hikes and my bike riding along the river.

Some good new for you though is that work is going really great for me. My boss loves me and other people notice it too and have called me “her favorite” which is true. Cause I’m just so awesome at my job. Haha. I mean, it’s true, so I’m gonna own it. I’m getting to try new things such as joining committees we have at work and also doing some new hire training as well as mentoring my fellow coworkers. I think exciting things are coming my way! Stay tuned.

Anyways, back to the healthy eating. As I said last time, I took a quick trip to Dallas to celebrate my nephews 2nd birthday and of course I made a Trader Joes run. I stocked up with some of my favorites like their vegetable fried rice, honey pretzel sticks, chocolate jumbles, pub cheese, and macaroni and cheese. I also got lots of new products to try.

So far, my favorite new product is their frozen meatless sausage patties. They can be heated up in microwave for a super quick breakfast side.

  
Another great new product is their freeze dried mango. Yum. I truly love mango so much.

 
Another new product is their peanut butter and jelly Greek yogurt. I loved this. It really did taste just like peanut butter and jelly. Wish I would’ve got more!

 
A couple other products I bought, tried, and liked were their chicken hotdogs, their frozen chile relleno dinner, and their frozen silver dollar pancakes.

  

 

 
I’ve still got lots more to try, but I haven’t been cooking as much lately. Unfortunately (for my stomach and my wallet) I’ve been eating out more often for dinner. I’m trying really hard to work on that this week though.

I have 2 goals for myself this week. Monday-Friday, I’m trying to not eat out. This really pertains to dinner, just because I NEVER eat out for breakfast, lunch, or snacks. My second goal is to eat vegetarian Monday-Friday for every meal.

My menu for the week looks like this:

Breakfast-eggs, cereal, meatless sausage, milk, mini pancakes, omelets, toast

I’ll pick 2-3 of the above and mix and match them to give my breakfast variety throughout the week.

Lunch-undecided right now but I’m thinking tomato, basil, and mozzarella sandwiches on ciabatta bread

Dinner-meatless Orange chicken over vegetable fried rice or cheese and veggie quesadillas with guacamole and salsa

Snack-V8, Quest bars, chex mix, pretzels and dip, dried fruit

Speaking of quest bars, I’ve found 2 more flavors I’m obsessed with. I love the banana nut muffin and the chocolate chip cookie dough. Seriously, the 2 best flavors so far!

Before I go, I just wanted to talk a bit about how I’ve been feeling since cutting out so much meat from my diet. On days where I truly haven’t been eating any meat, I’ve felt better. I don’t feel heavy or weighed down and my stomach has stopped hurting. The whole reason I started this change was due to the fact that I kept getting upset tummies every day around the same time in the afternoon. Gladly, I can say those have stopped.

Also, I feel like I spend less money on groceries weekly due to not buying meat or deli lunch meat. I used to spend like $9 on a pound of sliced deli meat for sandwiches. Beans and cheese are so much cheaper!

I have to say, I’m happy with the changes I’m making, and I seriously do hope that one day soon, I can call myself a vegetarian.

My goal is to eat around 1900 calories a day. This is a very typical day for me. I ate pretty much the same thing all week except I had two breakfast options and two dinner options just so I don’t get bored.

My sandwich this week was absolutely phenonminal! I’d normally make my sandwiches on normal sandwich bread, but I wanted garlic toast for dinner with my Caesar salads (had that twice this week for dinner), and I didn’t want to buy two breads, so I made my lunch sandwiches on the same bread I bought for garlic bread.

On my sandwich was brie cheese, shaved deli turkey, and wine flavored jelly. It was sooooo yummy! I never got tired of it all week. I’ll be picking up some more of those mini Brie bites at Trader Joes this weekend for future sandwiches.

Speaking of Trader Joes, I’ll be going there this weekend! I’m so excited because when I go, I always stock up on my favorites from there. They have just so many easy go to meals which makes eating healthy for me just that much easier.

The main reason for the trip though is to go celebrate my nephews 2nd birthday in Dallas! He’s the absolute best thing ever and of course I’ll have lots of pics to show you when I get back.

I’ll be going to a couple of my other favorite places in Dallas this weekend too, so I’m excited to blog about my adventures when I get back!

Mother’s Day 2015

Today is Mother’s Day! And luckily, I got to share the day with my mom. I always cherish the times I get to enjoy hanging out with my momma one on one. She’s so much fun to be around, she’s always positive, and she always has a warm smile on her face.

I know, I know, everyone always thinks THEIR mom is the best mom, just like everyone always thinks THEIR dog is the cutest dog. But, she really is the best. And my dog is the cutest.

So for Mother’s Day, I took my mom and stepdad out for brunch and mimosas at Palace Cafe. It’s a cute little restaurant on Cherry Street here in Tulsa that I really enjoy going to.

For brunch, I had the crab cakes Benedict, my mom had the biscuit of the day which was a biscuit topped with steak, poached eggs, and hallandaise sauce, and my stepdad had the salmon BLT with an Asian twist to it.

My gift to my mom was really brunch and spending time together, but I also got her a couple of small gifts.

 

I got her a box of 5 nice chocolates from my favorite local chocolate store here in town. I also got her a pair of socks. Yep. Socks. I never claimed to be the best gift giver. But my motto is, I buy what I like. I learned that from my sister. Anyways, they’re inspirational socks with sayings such as “I am confident” or “I am amazing” or “I am a great friend” or “I love you” which is the quote on the pair I got my mom.

After brunch, our plan was to go ride bikes on Riverside. It was supposed to rain, but thankfully it held off all day, so we did indeed get to go ride bikes!

   
 

Bike riding with my mom was a blast! We rode all around the cute town of Jenks and also up and down Riverside.

Notice how the picture my mom took is half sky and no bike? ….lol. She’s never claimed to be an expert photographer, but I love her anyways.

After our 5 and 1/2 mile bike ride, we decided to go get coffee and dessert at Starbucks. Since the weather today was absolutely amazing (warm, breezy, and overcast) we sat outside and enjoyed our coffees and smores tart.

   
   

Yum! We shared the 310 calorie tart for the perfect afternoon dessert.

Right next door to Starbucks is a health store called Complete Nutrition. I’d never been there before, so I wasn’t sure what to expect, and to my surprise, they had Quest bars!

  
If you don’t know about Quest bars, you should! They have the best stats ever. Obviously the nutrition varies on each flavor, but the smores bar (my favorite so far) has 180 calories, 8 grams of fat, 23 grams of carbs, 1 gram of sugar, 20 grams of protein, and 13 grams of fiber. Seriously, the fiber part gets me! It’s the perfect snack. 

So yeah, there are other “health” bars out there that taste better, but these taste really decent considering their nutritional value. We each bought 4 bars and 2 bags of the Quest brand chips.

If you know me at all, then you know my weakness is chips. They’re salty. They’re crunchy. They’re delicious. They’re not great for you. These Quest chips are a GREAT alternative to regular potato chips.

  
The chips have 120 calories per bag with 2 grams of fat, 5 grams of carbs, 1 gram of sugar, and 21 grams of protein. They have a protein taste, yes, but these could easily pass for baked chips served along side a sandwich or with a dip. I would buy them way more often if they weren’t so expensive. Yum! I think I’ll take a bag with me next weekend to Dallas for a car ride snack.

For someone who is trying to go vegetarian or at least eliminate a lot of meat from their diet, these chips (and bars!) are a great way to make sure you’re hitting your protein goal.

After leaving the health store, I brought my momma home and headed to my own home to enjoy the evening with MY child, my doggy, Pudge.

  
She watched me eat dinner, listened to some Nicki Minaj songs with me, got some yummy treats (I assume they’re yummy, though I’ve never tried them), and we enjoyed a long walk outside in between the rain/thunderstorms.

Today was a perfect day! I love weekends. I love spending time with my mom. I love combing the two.

“I’m On That New Diet Where You Eat Everything And Pray For A Miracle”

First things first… I have a weight update! I went to the nutritionist Friday and I was down 3.6 pounds from the last time I saw her 4 weeks ago. That’s 30 pounds lost since I started going to my nutritionist. Currently I’m at 326.4 pounds.

My eating this week was the usual. Breakfast was great. Snacks were great. Lunches were great. Dinner was crap.

My food schedule is so structured during the day. I have perfected doing the healthy eating all day until dinner. Breakfast is always something quick, like a microwaved Jimmy Dean omelet with toast and milk or bran flakes cereal with microwaved scrambled eggs.

   
   

I pack two snacks and a lunch to take with me to work, so those three meals are always portioned out and easy for me to control. Snacks are usually low sodium V8’s, peanut butter and crackers (with frozen cherries), almond thins and dip, bananas, or bread and cheese, this week being roasted garlic focaccia with brie cheese.

   
 

Lunches this past week have been leftover steak and Brussels sprouts with mashed potatoes, tuna sandwiches, and fat free refried black bean tostadas.

  
   

The steak was leftover from grilling out with my dad last weekend. He bought 2 filet mignon steaks because he thought they were small and that it wouldn’t be enough. For someone who’s trying to reduce their meat intake, it was the perfect size. So, I got leftovers!

The Brussels sprouts were leftover from Sunday cooking with the BFF. We decided to workout and cook a healthy dinner. We made roasted Brussels sprouts with a light garlic aoili, a “risotto” using a mix of couscous, quinoa, lentils, and garbanzo beans with chicken broth and Parmesan cheese, and we bought a rotisserie chicken for our protein. As for the workout part, we did 20 minutes of turbo fire. I would say it’s a mix between jazzercise and tiebo. It was fun and I definitely was sweating my butt off. I even took a picture because I had sweat dripping down my face.

  
The refried black bean tostadas I made this week were amazing! I bought a Mexican brand of the canned beans and just layered them onto oven baked corn tortillas with guacamole, shredded low fat cheese, and diced Roma tomatoes. Sooo good! I’ll be making these again for sure!

I forgot that one day at work they had free sandwiches, so of course I’m cheap, so I took advantage of the free lunch. I had two sandwich pieces, one was italian and the other a ham and swiss.

  
I also had a lemon poppyseed muffin (not pictured).

For dinner this week, I ate out twice, and cooked at home 3 times. At home, I had baked fish with mashed potatoes and green beans, frozen macaroni and cheese from Trader Joes, and a random assortment of things in my freezer one night which included a scallion pancake, a chicken tender and the small pieces left at the bottom of the bag, crispy curry potstickers, and some asparagus.

   
 

The nights I ate out, I had a lot of food at Taco Bueno (it was cinco de mayo and Mexican food was calling my name) and I had Raising Canes chicken and fries. And I had Dr. Pepper with both meals. Speaking of Dr. Pepper….I love a good meme.

  

I wish Dr. Pepper wasn’t so similar to crack cocaine…

Anyways. I’m really going to work on my dinner choices this week. I bought EASY options for this week. Like, E.A.S.Y. Like, open up the bagged Caesar salad kit and open the dressing packet, easy. And open up the cooked grilled chicken strips and throw them on the salad, easy. Seriously, if I get lazy and eat out this week, then there’s seriously something wrong with me. I literally (I can’t say this word without giggling anymore. Thanks SNL!) could not be more prepared or set up for success this week.

There’s just one last thing I wanted to share with you guys.

As you know, I’ve been going to the gym with my friend Demi 2-3 times a week. Almost every time, we run/walk on the treadmill. Well, recently we’ve been adding in some running, before it was mostly walking. Anyways, I started at a 17 minute per mile pace, then brought that down to 15 and a half, and then today my pace was 14 minutes and a half for a mile. 14:36 to be exact.

It’s always exciting to keep shaving time off your pace, so I was excited about that!

Well, it’s late so I better get some sleep. It’s Mother’s Day tomorrow and I’m spending the day with my momma, yay! I think I’ll do a Mother’s Day post tomorrow, so be on the lookout for that tomorrow night some time.

A Little Bit Of Everything

This last week was a good week for me. Work went well, exercise happened, and my food was on point. Oh, and I finished reading the 50 Shades of Grey trilogy. So, just wanted to tell you about my week!

Food

As I’ve said, I’ve been eating less meat recently and have been enjoying vegetarian lunches for the past month or so, as well as mostly vegetarian breakfasts and snacks. Here’s some of what I ate last week.

Breakfast was either bran flakes cereal with skim milk and egg whites with ketchup OR a frozen Jimmy Dean omelet with 2 slices of whole wheat toast and skim milk.

   

 

My vegetarian lunches last week were either tomato, basil, mozzarella salad with roasted garlic focaccia OR my new favorite sandwich, a mashed white bean sandwich with avocado, red onion, and leaf lettuce served with canned carrots or green beans.

   

 

This white bean sandwich is so simple. Here’s the recipe!

White Bean Avocado Sandwich

-1can great northern beans, drained, rinsed

-1 tbs olive oil

-1 or 2 tbs fresh lemon juice

-salt and pepper to taste

-1 small avocado, halved

-sliced red onion

-lettuce of choice (I used green leaf)

-sandwich bread (I used sliced focaccia)

Instructions: (Makes 2 Sandwiches)

Put the white beans in a bowl. Mash them so that half are mashed and half are still sorta whole. Add in olive oil, lemon juice, and salt and pepper to taste. Stir well. Serve on lightly toasted sandwich bread with 1/2 of an avocado scooped out, sliced red onion, and leaf lettuce. Eat and enjoy.

Dinners last week were either a basil, mozzarella naan bread pizza with turkey pepperoni and a side salad OR a frozen Indian dinner from Trader Joes OR mini chicken tacos with a side salad.

   

   

I loved the dinners this past week because they were all simple. Assembled and cooked within 10-15 minutes.

For snacks last week, I had my usual V8 with 1/2 of the almond coconut kind bar for my first snack and 2 1/2 tbs of Trader Joes Greek yogurt spinach dip with almond thin crackers for my second snack.

   

 

Exercise

This week, I exercised 4 1/2 times from last Sunday to today. Last Sunday, I walked around my moms neighborhood with her for almost 45 minutes. On Tuesday night after work, I walked 2.10 miles and it took about 30 minutes. The half comes from Wednesday, where I walked around my apartment complex for about 10 minutes with my dog. I was pretty tired because I was staying up late every night to read to finish 50 Shades.

I decided to not stay up too late Thursday so that I wouldn’t be too tired to exercise Friday night. Friday, I walked for almost 2 miles for about 30 minutes total. Friday felt like a good workout and I was sweating and exhausted after I was done, but felt great!

For today’s exercise, my best friend had the idea to go hiking. We have an area here called Turkey Mountain, so we decided to go and it was such a blast. We hiked about about 45 minutes, which didn’t even feel like 45 minutes. Halfway through the hike, we came upon a lake and thought it’d be the perfect exercise selfie.

The BFF and I are saving money to go to Mexico next year, so we’re trying to eat healthy and get in shape for our trip. We’ve decided that when we hang out, we’re going to do free/cheap things and also try to exercise instead of our usual eating out. Next week we plan to go rent bikes and bike around the city. Can’t wait!

Some of the advice I got from my nutritionist really helped me with my eating this week. I no longer am looking at meals as cheat meals. If I’m going to go out to eat, I’m going to budget it into my calorie goal. I had to do this twice this weekend. Once, I went out to lunch with my mom this weekend, so I cut back calories from breakfast so I could afford the meal calorie wise. And of course we made a healthy decision and went to Zoe’s Kitchen, so that made it easier. I had the grilled chicken pita with feta slaw and no mayo pasta salad.

  

The second time I ate out, it wasn’t as healthy. I had the chicken and waffles and ate about half of the chicken and half of the waffles. We also had an appetizer of sweet potato fries with spicy caramel and bacon. Super delicious! The restaurant doesn’t have their nutrition information displayed but I used my fitness pal and ended up saying the meal was about 1000 calories, which only put me over my calorie goal by 100 since I budgeted for it that day.

Yes, I felt guilty for the meal, but I also had exercised the night before and was planning to exercise Sunday, which I did, so I feel like I worked some of it off. Either way, I’m not going to let it get me down.

Overall, last week went great! I’m excited for this week also to be filled with healthy foods, fun exercise, and and weight loss! I’ll be weighing this week sometime, so I hope to have a new weight update soon.

Mr. Grey Will See You Now

As promised, I’m back with another blog post mainly dedicated to talking about my nutritionist appointment. I really wanted to share sort of what I’ve learned, what we talk about, what we do in our sessions, etc. So, let’s get started!

I’ve been going to my nutritionist for about 4 months now. She’s my accountability person. I willingly tell her the truth about everything food related. She’s my safe place, someone who I know won’t judge me. If I ate 2 cheeseburgers from McDonald’s for a snack, I can tell her knowing that I won’t get a “dammmmnnnnnnn” look. You know, that look when you say something crazy and people look at you like “dammnnnnnn.” And I really did eat 2 cheeseburgers for a snack one day and I felt 100% ok with telling her. If im not honest with her, she’s going to know. She weighs me every session so might as well tell her EVERYTHING.

So like I said, she weighs me every time at the very beginning of our session. Then she uses this cool machine that measures my body fat % or something along those lines. Not too sure because those results aren’t something we look at, but she keeps track of that number so she can track my progress. As of Friday, I’ve lost just over 25 pounds since I started seeing my nutritionist.

Next thing we do is go over my food log. She’ll look at everything I’ve logged over the past 2-3 weeks since I saw her last. If something pops out to her, she’ll ask me about it. A couple months ago, she saw pizza and waffles for dinner on the same day and was like, “Are pizza and waffles together a thing now?” I just answered, “Nope.” And then we talked about why I made that choice, or did I eat the pizza, but was still hungry so went for a waffle, or how was I feeling when I went back for more food.

In this most recent session, I told her about the weekend where I ate my feelings because I was sad. She asks about how I was feeling and what coping mechanisms did I use to feel better. We went over coping skills that are helpful, such as reaching out to a friend, doing something that’s a distraction, or writing in your journal. I did all of these things after my bad weekend of eating and I was self medicating and didn’t even realize it. I thought that was pretty cool! There have been times in the past where I’m not sure I would have been able to get myself out alone, but I did it this time (with the help of the BFF) and that was a great feeling.

Every session is something new. One week we talked about the different fats and which ones are good and bad. Another week we talked about the size of each meal and how to space out my calories. One thing we found out was that I was hungry in the evenings. So, she had me bulk up my breakfast so that I eat 500 calories for breakfast and it has helped so much! My nutritionist is great with finding out exactly what works for ME. Also, I can’t say enough how grateful I am for health insurance. My nutritionist appointments are covered 100% on my insurance, which makes me able to go see her.

More recently, we’ve started talking about exercise. She never pushed me to start. She never got mad at me if I didn’t exercise. But one day, I just started walking every now and then with my mom, which led to me exercising on my own. We set a goal for me to try to exercise 2-3 times a week for 30 minutes. Last week, from Sunday-Saturday, I exercised 4 times. Part of me is getting out there and walking because it makes me feel good to move my body and part of me is going because I have someone to hold me accountable and I want her to see me accomplish the goals we’ve set for myself.

Another great thing I’ve learned from my nutritionist is how I look at “cheat meals.” I no longer plan cheat meals. The reason being this….I got a pizza one Friday night or my cheat meal. So in my brain, I was going to eat 4 of the 8 slices. For the other 4 slices, I was going to eat 2 slices and a salad on Saturday and Sunday so that I still stayed within my calorie budget, which I did. What I found was so interesting is that I was just fine eating 2 slices and a salad for the days I hadn’t labeled as cheat meal days. So if I could have just eaten 2 slices on Friday, I wouldn’t have gone over my calorie goal.

Instead what my nutritionist told me is that she understands I’m not going to eat perfect 100% of the time. Really, I’m going to be eating great 80% of the time and 20% of the time will be meals like the pizza, where it’s not the best option. With this, I’ll still be in my calorie goal so there are technically no cheat meals. I just found this way of thinking really clicked, and although I’m still working on it, I’m no longer looking at meals as cheat meals. Obviously I’m not perfect, but I’m improving with this way of thinking, because this IS a lifestyle change and I want this weight loss to stick.

Last thing I talk about with my nutritionist is my hobbies. I recently discovered I really don’t have any, but that’s something I’m looking to change and I’m currently working on. I’ll talk deeper about this in another post once I see some changes in how I spend my free time.

I did recently decide to start reading again, which is something I’ve always loved. I’m one to jump on the bandwagon dead last. The Twilight series? I started reading it after the first movie came out to rent. I absolutely loved that series. So, I finally gave in and started reading 50 Shades of Grey. I LOVE it! It’s seriously so good! Which reminds me, I gotta go! I’m in the middle of a chapter and I need to see what happens next.

S.H.I.T. – So Happy It’s Thursday

This week has been a great week! I’ve exercised twice on my own, my eating has been good, and I’m seeing results! My weight has gone down and I’m also starting to feel better overall.

As for the exercise, I’ve walked twice this week (so far) on my own for 30 minutes each time and went 2 miles each time. I was sweaty and tired afterwards and it felt like a great workout, even though I was just walking.

I normally had an excuse to not exercise during the week. For example, “I get off work late” or “It’s too dark outside when I get off work” or “I don’t want to get up early.” I could go on. But for some reason as I was driving home on Monday, the sky was dark but I could still see the very tail end of the sunset, the weather was just right, and I was motivated to get outside and move. Also, walking outside is free! And I’m cheap so that’s a double bonus.

My eating this week has also been good. I’ve been eating vegetarian for my lunches almost everyday. I’ve had black bean nachos and brown rice spaghetti with marinara and Parmesan cheese for lunch this week, both with a small canned veggie such as green beans or carrots.

  

I’ve found that cutting out some meat out of my diet has helped my stomach. I used to get an upset tummy after eating almost any meal, and now I don’t have that problem. So, I think I’ll stick with vegetarian lunches. I’m excited to share with you next week what I’ll be eating for my vegetarian lunches. It’s going to be good!

Dinners this week have consisted of PF Chang’s frozen Chinese food over some vegetable fried rice from Trader Joes. Seriously, it’s sooo easy and tasty. Love that dinner! Also, I had some frozen precooked chicken tenders and frozen mashed potatoes from Trader Joes. Are you seeing a theme here? I love easy and frozen foods that are convenient for me to just heat up after work. Everybody has what works for them!

  

Doesn’t that look good? That’s the sweet and sour chicken from PF Chang’s. It’s 336 calories for 1/2 of the bag. That’s awesome for delicious Chinese food! Yum!

The last thing I wanna mention is my weight. I’m down to 330.9 pounds. That’s almost 5 pounds down this week! Is it weird that I wanna be all old school here and say “raise the roof!” I think I have been watching too much “Unbreakable Kimmy Schmidt.”
