As promised, here is a full post over “What I Ate Thursday.” I think these are fun because like I’ve said before, I’m curious about what other people eat, especially curious to see what a normal food day looks like for other people. Well, here’s mine!

My goal is to eat around 1900 calories a day. This is a very typical day for me. I ate pretty much the same thing all week except I had two breakfast options and two dinner options just so I don’t get bored.

My sandwich this week was absolutely phenonminal! I’d normally make my sandwiches on normal sandwich bread, but I wanted garlic toast for dinner with my Caesar salads (had that twice this week for dinner), and I didn’t want to buy two breads, so I made my lunch sandwiches on the same bread I bought for garlic bread.

On my sandwich was brie cheese, shaved deli turkey, and wine flavored jelly. It was sooooo yummy! I never got tired of it all week. I’ll be picking up some more of those mini Brie bites at Trader Joes this weekend for future sandwiches.

Speaking of Trader Joes, I’ll be going there this weekend! I’m so excited because when I go, I always stock up on my favorites from there. They have just so many easy go to meals which makes eating healthy for me just that much easier.

The main reason for the trip though is to go celebrate my nephews 2nd birthday in Dallas! He’s the absolute best thing ever and of course I’ll have lots of pics to show you when I get back.

I’ll be going to a couple of my other favorite places in Dallas this weekend too, so I’m excited to blog about my adventures when I get back!

So much to share!

It seems as though my blogging will be a weekly thing just because I only really have the time and energy to blog on the weekend. That makes for longer posts filled with everything from the week. I like having a theme, but it seems that my theme again this week is “a little bit of everything.” Boo. That’s boring. How about instead this weeks theme is “Selfies” because I have a lot of pictures to share and they’re mostly selfies.

So last week, I left off saying that I was about to go hike on Turkey mountain again with friends, which we did indeed go. We hiked for about 50 minutes and I think we went a couple miles. Of course, we took breaks along the way to drink some water and take pictures.

   
 

Again, I had such a great time hiking and even more fun hanging out with friends. After our hike, we went to Freebirds for delicious burritos for lunch.

I didn’t exercise again all week until Friday evening. My friend, Demi, has a gym membership to a gym where she can bring a buddy for free every time. Luckily, I’m her buddy and she takes me for free. This works perfectly for me because I’m cheap AND I need to save money for Mexico.

Demi is a great workout partner because we’re on the exact same level fitness wise. When we workout on the treadmills, we finish our miles at the exact same time. We do this partly because we’re motivating each other. I’ll start to run, and then she’ll run. Then she’ll start running and keep going, and then I’m motivated to run again. We’ve made it into a fun little game/competition and it really helps us go faster, harder, and longer.

After the walking/running on the treadmill, we usually do a lot of stretching. Then, we’ll use the weighted balls to do arm exercises. I really need to get rid of my “wings.” You know, the ones that show up when you lift your arms up and out to the side, yet don’t actually allow you to fly? Those wings.

Sometimes we’ll also ride the stationary bike or the elliptical as well. Most times, we’ve been staying over an hour at the gym. I’m really thankful I’m getting to go for free because when it starts getting really hot outside, I’m not going to want to be outside hiking and biking, so thank God for great friends with gym memberships!

Let’s talk about the good stuff now. Food.

My eating was pretty terrible this week. I ordered pizza. Twice. One day, I even ate the entire pizza in 2 hours. This was me…

Only mine was thin crust. That’s better though right? Right? Anyone…?

Eh, obviously not. But I’m glad to say I’m still at the same weight. Hopefully I’m back to being motivated.

I DID make lots of healthy choices this week too.

Breakfast was the same as last week, omelets with toast and milk OR bran cereal with scrambled eggs.

Lunch this week was tuna sandwiches with carrots or fat free refried beans tacos with lettuce, tomato, and cheese with carrots on the side.


I have discovered how easy, fast, and delicious tacos can be. You can put anything into a taco! And they’re literally the quickest vegetarian lunch ever. Throw any canned bean or refried bean in there and add your favorite toppings such as avocado, low fat cheese, tomato, onion, lettuce, salsa, etc. The possibilities are endless!

Oh, I also brought a frozen Trader Joes meal one day for lunch when I was being lazy and didn’t want to cook. And by cook, I mean pack my lunch with things that were already cooked.

 
Butter chicken with basmati rice. Definitely buying this again! It was spicy and very flavorful and only 385 calories. Yum!

Dinner was pizza (twice), chicken tenders with zucchini fries and carrots, huevos rancheros, or a sandwich bought from Walmart with Pringles. Like I said, my eating wasn’t great this week.

 

  

The huevos rancheros was pretty tasty. It was 3 corn tortillas topped with 2 over easy eggs topped with black beans, tomatillo salsa, shredded lettuce, and crumbled cotija cheese.

I’m really hoping to get my healthy eating back on track this week. I have my nutritionist appointment in a week and I’d like to be able to show progress since I last saw her, almost 4 weeks ago.

I probably shouldn’t tell my nutritionist about the food truck festival I went to today. I had so much food: jerk chicken tacos with black bean and corn salsa with chipotle mayo, chips and black bean dip, fried mini donuts topped with fruity pebbles, and a hotdog topped with bacon, cheese, cream cheese (because one cheese isn’t enough), and ranch. The festival was so much fun though and worth it, especially since I got to hang out with the bestie.

Here we are right when we got to the festival. We were waiting in a really long line for tacos. I was “sad” because it was hot and I was hungry.

 

Overall, I’d still say this week was a great week. I remember before when I was at my heaviest, I didn’t enjoy being out or going places. My life was staying in at home almost all the time, in the comfort of my air conditioned home. While I was technically alive, I wasn’t living. Now, even though I’m still extremely overweight, I feel like I’m living my life. I’m getting out, going places, seeing sights, and not living life in front of the tv. It’s refreshing.

Also (a side note) I’m taking pictures again! I NEVER took pictures before because I was fat and felt gross. Now, I’m still fat, but I’m ok with the pictures. I want to be able to look back on my life and have photos of the great memories and events from my life. (Even if the photos are taken at an angle and taken from up high to reduce my double chin and have an added filter….)

Alrighty, Day 3 Update!

So first, let’s talk about my exercise last night!

I decided to skip the treadmill and just walk outside because of the perfect weather. I didn’t take a watch or phone with me outside, I just went and walked until I decided it was time to stop. I checked the clock before I left and right when I got home. I walked exactly 20 minutes. I’ll take it!

I stopped right around the time my side was starting to hurt. I’m sure it started hurting because I had just eaten Chinese food for dinner and stuffed myself. At one point while walking, I felt myself want to throw up and I had to suppress it. It’s not a good feeling while you’re trying to exercise which is why I always work out on an empty or pretty empty stomach. But hey, it’s the first time I’ve exercised in months so I’m not going to complain! 🙂

As far as my eating, today was pretty good. I ate healthy at every meal and I didn’t overindulge at snack time. I DID go to a movie and have some buttered popcorn, but I also had 400 calories left in my day so I think I didn’t go over my calorie goal too much. Oh wait, I had a pop at the movie theater… Eh, so I went over a lot more than I thought. I just have to keep the mindset that it’s not the end of the world and to look a ahead to making the next meal better and healthy.

It’s Called Diet Because All The Other 4-Letter Words Were Taken

Ok, it’s about time I started blogging again. I have found that blogging keeps me motivated, it keeps me honest with myself and those who read my blog, and it holds me accountable for my actions.

My actions as of late have been downright horrible. For the past 2 months, my diet has been back and forth. I’ll eat healthy for breakfast and lunch. Then when snack time rolls around, I’ll go buy 4 cupcakes and eat them all. Or I’ll go to this popcorn place near my work and I’ll buy a large bag of salty delicious popcorn and eat it all.

Dinner is even worse. I’ve been to Panda Express for dinner too many times to count, just this month! And I’ve eaten from Raising Canes almost as many times. Nothing good can come from Raising Canes… All they sell is fried chicken tenders, fries, and creamy coleslaw.

THIS HAS TO STOP! I’ve gained back a little weight (10 pounds), and I’m sitting at just under 300 pounds. I got down to 287 and just kind of quit. I quit exercising, I quit caring as much about what I ate, I quit blogging… I just got busy and lazy.

BUT, that all changes today! Today I’m back to my healthy lifestyle again!

-NO more sweets
-NO more pop or sweet tea (I probably had about 5 sugary drinks in the past couple months, so that hasn’t been too horrible)
-NO more fast food
-NO more popcorn (unless it’s healthy popcorn)
NO more food binges

I’m nearing my one year anniversary of the day I started this journey and I want to end the year on a high note. I started December 18th, 2012. I’d like to have lost 90 pounds by that date this year, so this is me officially setting that goal.

Wish me luck! I’m going to need lots of it! Oh and willpower, I need lots of that too. I can and will do this!

Since I’m trying to hold myself accountable, here’s what I ate today.

Breakfast- 1 and 1/2 cups of Cheerios with 1 and 1/4 cup skim milk.

Lunch- Ham and cheese sandwich on low calorie bread with fat free mayo, can of low sodium tomato juice, and a banana.

Snack- Homemade turkey meatballs and spaghetti soup, handful of cashews, and a small bowl of Kashi 7 grain puffs cereal with skim milk.

Dinner- Scrambled egg and egg whites, turkey bacon, toast, asparagus, sliced tomato, and 1 tablespoon of low calorie butter.

After dinner snack- Cherry cobbler fruit bar.

All together it was 1803 calories, just 3 calories over my goal.

Today was hard since I’ve gotten used to eating more calories, but I know from experience it gets easier after you get used to it. So I’m hoping to get past these next couple weeks quickly!

My Fit Foods: Product Reviews

Since I’ve started back to school, the only completely free days I have now are Sundays. On Sunday’s, I have to do my homework, clean my apartment, do the dishes, keep up my car maintenance, do my laundry, take my dog in to be groomed, see my family, grocery shop, prep my meals for the week, etc. Obviously I don’t do ALL of that EVERY Sunday, but I do most of it regularly.

On top of all of that, my work days somehow keep getting longer. It’s becoming regular to get home from work at 8 or after.

I knew I needed to come up with something to make things a bit easier for me for at least the next few weeks. So, I decided to buy my dinners and snacks from My Fit Foods instead of having to cook this week.

Another reason I decided to go to My Fit Foods (MFF) is because when I cook at home, I have to eat the same thing multiple times for dinner. I’m REALLY getting burnt out on the same foods by the end of the week, which is making it harder to stay on the healthy eating track. With the MFF meals, I can have variety and I’m very much so looking forward to that!

If you’re not familiar with My Fit Foods, let me tell you a little bit about it!

MFF is a store that sells fresh, healthy, prepared foods. They’re sold in little microwavable containers. They have breakfast options, lunch options, snack options, dinner options, and even dessert options. Their foods come in 3 different sizes (small, medium, and large) so that you can choose which one is right for you.

Our MFF opened in October of last year. I remember I tried it out shortly after they opened (2 months before my Drs. visit that changed everything) and I didn’t have the best of luck with it. I thought the food was boring and I found it hard to eat.

I decided to give it another chance because the person I am now is way different than the person I was then. I enjoy healthy food now, but back then I was still eating pizza and burgers everyday, so of course I wasn’t a fan of their foods.

I’m really glad I decided to go to MFF this week. It’s made my life just a little bit easier. No cooking and no dishes this week!

I went to MFF on Monday and got 5 dinners, 1 breakfast, 4 snacks, 1 dessert, and 1 individual bag of healthy egg white chips for the week, all for $78.

I tried my first meal Monday night. I had the Fit Nation Chicken Nuggets. It’s chicken breast meat cut into nugget size and breaded with almond four, flax meal, and spices. It’s served with broccoli, cinnamon carrots, and their version of “honey mustard” which is plain yellow mustard sweetened with agave nectar. This meal in the medium size has 390 calories.

I would give this meal an 8/10. The “honey mustard” was delicious. I’m really glad it came with the meal because it made the chicken taste better than it did without the sauce. The carrots were surprisingly delicious! And the broccoli was good. Nothing special, just broccoli. I’ll buy this meal again for sure.

The next meal I tried was the H-Town Breakfast. I knew I’d love this one because it has chicken apple breakfast sausage links in it. It also has rosemary red potatoes and scrambled eggs. This meal in the small size has 290 calories.

The great thing about their breakfasts is that they use a 5:1 ratio for the eggs, meaning they use 5 egg whites for every 1 yolk. I did have to salt my eggs and potatoes a little, but I’ll try not to next time. I’d give this meal a 9/10.

The next thing I tried was one of their snacks, the Healthy Hummus Bowl. It comes with a small cup of hummus, chopped grilled chicken breast, celery, carrots, and grape tomatoes. This meal only comes in one size and has 150 calories.

There was more of everything but I was hungry and almost forgot to take a picture!

The hummus was fantastic! I really enjoyed it most with the carrots. The tomatoes and chicken made it a good snack. I definitely could have done without the celery though. I give this snack a 6.5/10.

My next meal was Cynthia’s BBQ Chicken. It had chopped BBQ chicken breast, cheddar mashed red potatoes, and green beans. This meal in a size medium has 390 calories.

This meal was great, BUT, I did add my own BBQ sauce. There simply wasn’t enough on the chicken, so I added about 2 tablespoons of my own favorite BBQ sauce which only added 30 calories. The potatoes and green beans were good, but I did again add just a little bit of salt. What can I say, I love my salt.

I enjoyed this meal because it was simple and it was something I could eat more than once in a week. I give it a 7.5/10.

Lemon Poppyseed Overnight Oats Recipe

I am not sure when my love for lemon poppyseed came about. I DO know that I remember when I was younger, my sister and I would get to pick out which flavor of muffin mix we wanted when we’d go to the grocery store. I think my sister almost always picked out the strawberry one. I of course didn’t want to get the same flavor, so I got either chocolate or lemon poppyseed.

I loved the lemon poppyseed muffins because..
1. They tasted like lemon without the sourness. And 2. I heard that if you ate a lot of them, they’d make you show up as positive on a drug test.

To a young middle school girl like myself, I thought that was pretty cool. 🙂

Now, I like the lemon poppyseed combo just for the fact that it’s delicious! I think just about anything can be flavored lemon poppyseed. I actually remember one of the first recipes I made off of Pinterest was lemon poppyseed pancakes. Seriously yum!

With all of that being said, I created lemon poppyseed overnight oats. I tend to find one thing I love, then eat it everyday for a few days, and then forget about it until I crave it again. That’s exactly what I did with this overnight oats recipe. I had it for a week straight for breakfast a couple months ago, then forgot about it. Now, I’m bringing it back and lucky for you, I’m sharing my recipe with you!

Lemon Poppyseed Overnight Oats

1/4 cup steel cut oats
1/2 cup unsweetened vanilla almond milk (or skim milk)
1 tbs chia seeds
1 tbs poppy-seeds (I like mine really poppy’d)
1 tbs PB2
1/2 tsp lemon extract (or more if needed)
2 squirts stevia extract (or use sweetener of choice to sweeten to your liking)

Mix everything together in a bowl or cup. Cover and refrigerate overnight. Stir well in the morning. Add more milk if it’s too thick for you. Then eat.

I think the secret ingredient in this recipe is the PB2. It doesn’t really give it a peanut butter flavor, but it ties everything together and I think gives it that “muffin-like” feel that I associate with lemon poppyseed.

This recipe comes in at 300 calories, or 320 if you use skim milk instead of almond milk. It’s a perfect breakfast for me, especially since its so easy to grab and go. I hope you’ll try this recipe out for yourself!

So Close To The 200’s…I Can Smell It!

I haven’t given a weight update in a while I’m sure, so I thought I better do that today.

My weight loss hasn’t been the best the past couple of weeks due to my traveling and bad food choices. I weighed 311.9 pounds a few weekends ago before I left for Dallas the first time. When I got back, I gained a little weight. I think I got back up to 318.

My weight today is 310.6 pounds.

I realized I’ve been getting lazy. I’m not putting myself down, I just generally have been lazy with my healthy eating. I find that on weekends, I tend to be a little more lax on eating healthy. I’m not going out and eating fried foods and burgers, but I’ll have sauces on my foods or I’ll eat out at restaurants where I’m not sure how many calories are in my food, or I’ll eat less vegetables on the weekends, stuff like that.

I’ve also found that I’m not measuring foods out. I guesstimate. Guesstimating doesn’t always work, so to solve this, I went out and got some new measuring cups and spoons (mine slowly disappeared over time, I think the dishwasher ate them!).

I can’t get too too confident with my eating, because even though I’ve lost 61 pounds, I’ve still got a lot more to lose. I really want to get out of the 300’s, so it’s back to being strict with my eating!

Here’s my plan:

1. No more sushi on Friday nights. Sushi doesn’t have enough any vegetables.

2. When I eat out, I’m going to actually calculate the calories of the meal and not assume.

3. Drink less diet pop. This one’s going to be hard.

4. Measure out my foods so I know exactly how much I’m eating.

5. Keep up the exercising.

I think if I follow these steps, I’ll quickly reach my goal to be out of the 300’s.
