Mexican Shrimp Tostadas

The healthy eating is getting a bit easier, but I’ve still got a weakness to go out and buy 4 cookies that I don’t need. And because of that, my weight is holding pretty steady at just under 300 pounds.

I was able to go to jazzercise twice last week, and probably twice this week also. I know….I could have definitely gone 4 times this week since I get off work so much earlier now, but yesterday I went and baked cookies with my grandma after work and Wednesday is MY BIRTHDAY so I deserve a couple days off from exercise. I DID go today, so that’s all that matters. 🙂

Anyways, I’ve got a super simple “recipe” to share with you that I made for dinner last night. It’s so simple that I wouldn’t call it a recipe. It’s more like a “put these things together” and you’ll have a great meal, recipe.

Shrimp Tostadas

(Makes 1 serving)

-2 tostadas
-3 oz of peel and deveined raw shrimp
-1 teaspoon minced garlic
-1/2 teaspoon chili powder
-1/2 teaspoons Mexican spice mix of choice
-1/2 cup fat free refried beans
-1 individual 100 calorie guacamole cup
-1 and 1/2 cups shredded romaine lettuce
-1/3 of a large tomato, diced
-1 oz queso fresco, crumbled

Vinaigrette (optional)
-1 teaspoon olive oil
-1 teaspoon flavored vinegar (I used Serrano honey infused vinegar)
-juice of 1/2 a lime

Calories=600 (Which might seem high but it works for me to keep me feeling full after dinner)

Instructions:

Mix the shrimp with the garlic, chili powder, and Mexican spice mix. Sauté in a sauce pan until shrimp is done.

While shrimp is cooking, heat up the refried beans in the microwave. When beans are warm, spread the beans evenly onto the two tostadas. Next, spread the guacamole over the beans. Top each tostada with half of the shrimp.

Load the tostada with lots of shredded romaine lettuce and diced tomato.

Mix the olive oil, vinegar, and lime juice to make a vinaigrette. Pour over the tostada. Top with crumbled queso fresco. Eat and repeat until all the tostadas are gone.

The vinaigrette is optional, but I just really love a sauce any way I can get it. I used this new vinegar and olive oil my sister bought me for my birthday.

The Serrano honey infused vinegar was perfect to make this vinaigrette but any vinegar would work!

I have noticed that I tend to use a lot of Mexican flavors when I cook. Luckily, I have found out how to make Mexican food healthy instead of making Mexican food the way I used to it eat…..covered and smother in cheese.

I made a great Taco Twist Soup this week that I’ll have to share with you all next!

P.S. The shrimp tostadas are great to eat while watching The Biggest Loser. I’m so excited for this new season of the show! I remember watching TBL back in January when I first started my journey. Watching the show really helped motivate me. I’m hoping this season does the same so I can get back on the right track 100%!

Alrighty, Day 3 Update!

So first, let’s talk about my exercise last night!

I decided to skip the treadmill and just walk outside because of the perfect weather. I didn’t take a watch or phone with me outside, I just went and walked until I decided it was time to stop. I checked the clock before I left and right when I got home. I walked exactly 20 minutes. I’ll take it!

I stopped right around the time my side was starting to hurt. I’m sure it started hurting because I had just eaten Chinese food for dinner and stuffed myself. At one point while walking, I felt myself want to throw up and I had to suppress it. It’s not a good feeling while you’re trying to exercise which is why I always work out on an empty or pretty empty stomach. But hey, it’s the first time I’ve exercised in months so I’m not going to complain! 🙂

As far as my eating, today was pretty good. I ate healthy at every meal and I didn’t overindulge at snack time. I DID go to a movie and have some buttered popcorn, but I also had 400 calories left in my day so I think I didn’t go over my calorie goal too much. Oh wait, I had a pop at the movie theater… Eh, so I went over a lot more than I thought. I just have to keep the mindset that it’s not the end of the world and to look a ahead to making the next meal better and healthy.

Day 2 Of Back To Eating Healthy

Day 2 went well…….most of the day.

It’s hard. I feel like I’m back at square one. I’m having to retrain my brain to think how I used to when it was easier to eat healthy all day long.

I had a healthy breakfast, a healthy lunch, a healthy afternoon snack, and then BOOM, my self control went out the window and I went to Panda Express for dinner.

I’m not sure why it’s harder to control myself for dinner, but it is. I tried to have willpower, but I got lazy.

I’m not going to beat myself up too badly over it. I’m just going to try and get better and stronger mentally everyday.

One positive thing I did have going for me is that The Biggest Loser came on tonight, so it was nice to feel that fire of motivation. If only The Biggest Loser was on TV BEFORE I went to Panda Express! Either way, it definitely is a motivating show to watch. I remember it was on TV when I first started my journey, so I think it really does help push you and encourage you to eat healthier and exercise. I’m even feeling motivated to go walk right now.

I’m getting back into that mindset (slowly but surely) of feeling guilty for the bad foods I’ve eaten and needing to exercise to work that food off.

Alright, so I paused the episode of The Biggest Loser to write this post because I just felt inspired to write my thoughts down on exactly what I’m feeling in this moment.

I’m going to go walk on the treadmill, even for just 15 minutes, but I’m going to go. Right now! See what I mean about this blogging holding me accountable?!

It’s Called Diet Because All The Other 4-Letter Words Were Taken

Ok, it’s about time I started blogging again. I have found that blogging keeps me motivated, it keeps me honest with myself and those who read my blog, and it holds me accountable for my actions.

My actions as of late have been downright horrible. For the past 2 months, my diet has been back and forth. I’ll eat healthy for breakfast and lunch. Then when snack time rolls around, I’ll go buy 4 cupcakes and eat them all. Or I’ll go to this popcorn place near my work and I’ll buy a large bag of salty delicious popcorn and eat it all.

Dinner is even worse. I’ve been to Panda Express for dinner too many times to count, just this month! And I’ve eaten from Raising Canes almost as many times. Nothing good can come from Raising Canes… All they sell is fried chicken tenders, fries, and creamy coleslaw.

THIS HAS TO STOP! I’ve gained back a little weight (10 pounds), and I’m sitting at just under 300 pounds. I got down to 287 and just kind of quit. I quit exercising, I quit caring as much about what I ate, I quit blogging… I just got busy and lazy.

BUT, that all changes today! Today I’m back to my healthy lifestyle again!

-NO more sweets
-NO more pop or sweet tea (I probably had about 5 sugary drinks in the past couple months, so that hasn’t been too horrible)
-NO more fast food
-NO more popcorn (unless it’s healthy popcorn)
NO more food binges

I’m nearing my one year anniversary of the day I started this journey and I want to end the year on a high note. I started December 18th, 2012. I’d like to have lost 90 pounds by that date this year, so this is me officially setting that goal.

Wish me luck! I’m going to need lots of it! Oh and willpower, I need lots of that too. I can and will do this!

Since I’m trying to hold myself accountable, here’s what I ate today.

Breakfast- 1 and 1/2 cups of Cheerios with 1 and 1/4 cup skim milk.

Lunch- Ham and cheese sandwich on low calorie bread with fat free mayo, can of low sodium tomato juice, and a banana.

Snack- Homemade turkey meatballs and spaghetti soup, handful of cashews, and a small bowl of Kashi 7 grain puffs cereal with skim milk.

Dinner- Scrambled egg and egg whites, turkey bacon, toast, asparagus, sliced tomato, and 1 tablespoon of low calorie butter.

After dinner snack- Cherry cobbler fruit bar.

All together it was 1803 calories, just 3 calories over my goal.

Today was hard since I’ve gotten used to eating more calories, but I know from experience it gets easier after you get used to it. So I’m hoping to get past these next couple weeks quickly!
